Description
What is a Horizontal Lagering Tank?
A horizontal lagering tank is a specialized vessel used in the lagering process of brewing beer. Unlike typical cylindrical tanks that stand vertically, these tanks are positioned horizontally, offering several advantages for the lagering process, which requires beer to be stored at cold temperatures for extended periods, usually ranging from one to six months.
 
Purpose and Benefits of Horizontal Lagering Tanks
One of the key reasons for using horizontal lagering tanks is their increased surface area relative to beer depth. In a horizontal tank, the yeast has a shorter distance to travel to settle at the bottom, which can accelerate the clarification process. This feature is particularly useful because it reduces the time required for the yeast and other suspended solids to settle, which is an important step in producing clear, high-quality beer.
 
Additionally, the horizontal configuration of the tank lowers hydrostatic pressure due to the reduced height-to-volume ratio. This is beneficial in preventing autolysis, a process where dead yeast cells break down and release unwanted flavors into the beer, such as those resembling meat broth or pet food. By reducing this pressure, horizontal lagering tanks help maintain the delicate flavors associated with high-quality lagers.
 
While similar results can be achieved with vertical fermenters by regularly removing yeast from the conical base, horizontal tanks provide the added advantage of freeing up space for longer cold conditioning periods. This allows brewers to produce beers with more refined characteristics, as the yeast undergoes final aging in a lower-pressure environment.
 
Historical Use of Horizontal Tanks
Historically, horizontal lagering tanks have been the traditional choice for brewers, particularly in the production of lager-style beers. Their design, which reduces the pressure on settling yeast, ensures that the beer undergoes aging in a manner that promotes a balanced and harmonious development of flavors. Although not all breweries use this method today, some have invested in horizontal tanks to enhance the lagering process and produce beers with a more delicate and refined taste profile.
